Prawn Fried Rice
Ingredients:
1. Boiled rice - 60% cooked - 3 cups
2. Prawns - 200 GM's
3. Capsicum - 1 diced
4. Onion - 1 sliced
5. Green onion leaves - diced
6. Garlic - 7-8 cloves - sliced
7. Soya sauce - 2 tspn
8. Oil - 3 Tbsn
9. Salt - to taste
10. Black pepper - crushed - 5-6 nos.
Method-
1. Boil rice till 60%done. Then strain and keep aside.
2. Clean veins of prawns n break the back tissues of prawns so that they don't curl much on frying. Fry them till light golden.
3. Add the same oil which was used for frying prawns to a kadahi. Add garlic. Saute and add onion. Keep on high flame and saute. Add capsicum and soya sauce and salt.
4. Add boiled rice and fry for 4-5 mins.
5. Add prawns and mix. Switch off the flame and add black pepper freshly crushed.
6. Garnish with green onion leaves.
